A Family Company

Antonius Caviar is a Polish family company built on the passion of Antoni Łakomiak, an ichthyologist who devoted his working life to fish farming. Over fifty years of fishing tradition sit behind it, and more than thirty years of specialisation in sturgeon.

The Antonius Caviar brand was established in 2014 as the result of decades of breeding experience, scientific collaboration, and a production philosophy built on patience.

Natura 2000 Waters

The farms sit inside Natura 2000, the EU’s network of protected natural areas. Sturgeon are raised in large, open lake and water systems with naturally flowing river water rather than closed basins.

That gives the fish space, and conditions as close to their natural habitat as farming allows. Baerii are harvested at around 10 to 12 years, Oscietra at 14 to 16. The process cannot be forced.

Hand-Made, Malossol

Production remains entirely hand-made, using the centuries-old Malossol method: minimal salt, so the natural flavour of the roe speaks for itself.

Roe from each individual female is assessed by a certified sensory panel before selection. Only caviar meeting the strictest criteria for texture, colour, grain diameter, and aroma is approved.

Packed at Source, Never Repackaged

Every tin is filled by hand at the facility in Poland and shipped in that same tin. No secondary repackaging means no exposure to air, light, or temperature swings, and no loss of nutritional value on the way.

Nothing is pasteurized. No borax (E285), no unnecessary additives. Heat treatment would extend shelf life at the cost of texture, flavour, and the natural richness of omega-3 and vitamins.

Certified and Traceable

Every tin carries a CITES certificate confirming legal origin and full traceability. The farms hold HACCP, IFS, BRC, and ISO 14001 certification.
