Acipenser baerii
The Siberian sturgeon. An elegant, relatively mild caviar with small to medium grains. Clean, creamy, lightly salted. Versatile, and often the right place to start.
Acipenser gueldenstaedtii
The diamond sturgeon. Slower to mature than Baerii, with larger, firmer grains. More complex and intense, with the nutty, mineral notes Oscietra is known for.
Rare albino sturgeon
A genetic rarity: pale golden to almost cream-coloured roe. Produced in very limited quantities, which makes it one of the most exclusive caviars available.
The stars are not different species. They are our quality selection within a single caviar. 6★ is the higher selection, chosen on grain size, uniformity, colour, structure, and overall quality. It typically has larger, more even grains, and is the more exclusive tier.
