Baerii Caviar comes from Acipenser baerii, the Siberian Sturgeon. It is one of the most established species in European aquaculture and the entry point into the Antonius range.
At Antonius’s farms in Poland, inside Natura 2000 protected areas, the sturgeon grow in open lake and water systems with naturally flowing river water rather than closed basins. The fish behind our Siberian 5★ are around 10 years old at harvest. That time cannot be bought back. It is the foundation of what ends up in the tin.
Each tin is sourced from a single female, never blended, and assessed by a certified sensory panel for texture, grain diameter, colour and aroma before approval. The roe is produced by the Malossol method (minimal salt) and packed by hand, directly into its final tin. It is never repackaged.
The flavour is clean and approachable: a delicate brine, a gentle nuttiness, a smooth finish. Versatile enough to work across a wide range of applications without demanding to be the only thing on the plate. No borax (E285), no additives, no pasteurization. Every tin ships with a CITES certificate.
