Albino Caviar is among the rarest products in fine dining. It comes from sturgeon carrying a genetic mutation that eliminates pigmentation in the roe. The result is a Caviar visually unlike anything else: bright, luminous gold, almost like a jewel. It is produced in extremely small quantities, even by a producer of Antonius’s scale.
Produced at the same Natura 2000 protected farms in Poland as the rest of the Antonius range, using the same Malossol method, packed by hand from a single female per tin, never pasteurized, no borax (E285), no additives.
The flavour is characteristically delicate, clean and pure, with less of the deep umami weight of Oscietra and a lightness that makes it ideal for high contrast or minimalist plating where the visual impact of the Caviar is part of the dish’s intention.
